The best part? It's super easy to stir-up using just a handful of everyday pantry ingredients. Ingredients:- - Eggplants, 3, medium-sized - Garlic Cloves, 1-2, crushed - Shallots, 2- 3 OR Scallions, 5, minced (just the bulbs, not the stems) - Plum Tomatoes, 2-3,seeded and diced - Fresh Flat-leaf Parsley, 1 tsp, finely chopped - Extra Virgin Olive Oil, 2-3 tbsp - Juice of 1/2 a lemon - Sea Salt, a pinch - Pepper, a pinch - Sesame seeds, to garnish - Chopped Garlic, to garnish Method:- • Pierce the eggplant with a fork and char it over an open flame until it turns black and soft.
