A staple at every psarotaverna (tavern serving seafood) in Greece, shrimp saganaki is made by tossing sautéed shrimp in a spicy tomato sauce and embellishing it with fresh herbs and feta cheese. Simple, straightforward, but bursting with robust flavours, this dish is comfort food at its finest. Spray a muffin pan or line them with paper liners and set aside • To a blender, add all the ingredients (except the chocolate chips) and process on high until the oats break down and the batter is smooth and creamy. Stir in the chocolate chips by hand • Pour the batter into the muffin pan and fill each cavity 3/4th of the way (Note: sprinkle extra chocolate chips atop each muffin, if you like) • Bake for 15-20 minutes until the muffin tops are set and a toothpick pierced through the centre comes out clean • Let the muffins cool for 10 minutes before removing.
