On our plates today is this Gluten-Free Green Bean and Feta Salad that'll take you less than 25 minutes to prep and serve and only 2-3 minutes to devour. What you need: 900g green beans 1/3 cup freshly squeezed lemon juice 1/2 chopped onion 2 cloves garlic finely chopped or minced 1/3 cup extra virgin olive oil 1 tsp dried oregano 1/8 tsp salt and pepper to taste 400g cherry tomatoes halved 1/2 cup chopped fresh basil leaves 1/4 cup chopped fresh Italian parsley leaves 1/2 cup feta cubed How: 1. Parboil the green beans by boiling for 3 minutes and then leaving in an ice bath to stop any further cooking 2. While green beans are cooling, make the dressing by whisking together the lemon juice, garlic, onion, oil, oregano, salt and pepper. Set aside. 3.
