A perfect company for the chilled winter evenings, CHEERS! - Traditional mulled wine. Ingredients 1 bottle medium to full-bodied red wine (A cabernet sauvignon, shiraz or merlot is ideal) 1/3 cupdemerara sugar or any natural brown sugar 1 cinnamon stick 1 star anise 6-8 cloves A pinch of grated nutmeg ½ cup orange juice 1 dried bay leaf ½ cup brandy How to make it: Pour the wine into a nonreactive saucepan, and place over low heat. Add the orange juice, sugar, cloves, bayleaf, star anise, cinnamon and nutmeg. Heat gently until the sugar has dissolved. Taste to see if you want the wine sweeter, and add more sugar to taste. Turn off the heat, and stir in the brandy. Strain the wine into glasses and serve hot.
