After a great NYE party, its time for some healthy stuff :).... Rocket and Fig Salad with Feta Cheese and Walnut Balsamic Dressing Ingredients: ½ cup walnut halves ½ cupextra virgin olive oil ¼ cupbalsamic vinegar 1 tbspDijon or other prepared mustard 1 tbsp honey A pinch of salt 5-6 cups rocket leaves 4– 5 small figs halved lengthways ¾ cup crumbled feta cheese How to make it: Wash the rocket leaves, tear them roughly into half, and place in the refrigerator for 15- 20 minutes to crisp up.Place the rocket along with the sliced fig in a large serving bowl. Sprinkle the crumbled feta over the leaves. Toast the walnuts in a non-stick pan over medium heat, for 3 minutes. Coarsely chop and place in a bowl. Add the olive oil, vinegar, honey, salt and mustard. Whisk until well combined. Taste and adjust seasoning.Pour the walnut dressing over the salad and gently toss to combine. Serve immediately. Note: You can prepare the dressing earlier and set aside, and leave the prepared rocket and figs in the refrigerator for a few hours.Just before serving, toss the salad with the dressing and serve.
