Start out with something as basic yet delicious as this Carrot Jam. Grab a bunch of fresh seasonal carrots and get ready to stir up some winter goodness to last you and the family through the week.
Ingredients:-
- Carrots, 4
- Lemon Juice, 1 tbsp
- Lemon Rinds, 1/2 tsp
- Sugar, 2 cups
- Cinnamon Powder, 1/2 tsp
Method:-
• Start by peeling and grating half of the carrots
• In a large pan, over medium heat, boil the grated carrots in water until soft. Remove from heat, drain excess water, and set aside to cool. Once cooled, blend the boiled carrots to make a puree and keep aside.
• Peel and chop the remaining carrot halves
• In a pan, over medium heat, add the chopped carrots and pureed carrots, along with all the other ingredients and mix well. Cook for approx. 12-15 minutes until it produces a thick, pulpy consistency
• Once the jam consistency is to your liking, remove from heat and let cool before emptying into a jar and popping into the refrigerator.
