Simmer down 1 ½ kg chopped apples, 2 cups apple cider, 1 cup light brown sugar and ½ tsp kosher salt in a Dutch oven for about 20 minutes; set it aside and add 1 tsp lemon juice, 1 tsp ground cinnamon, 1 tsp vanilla extract and blend well. Bake this mixture until it thickens and refrigerate for a few days before serving.
