If you re getting the party started early in anticipation of the weekend this Greek eggplant dip aka melitzanosalata is all you need to win your guests over and earn yourself the perfect host ess tag The best part It s super easy to stir up using just a handful of everyday pantry ingredients Ingredients Eggplants 3 medium sized Garlic Cloves 1 2 crushed Shallots 2 3 OR Scallions 5 minced just the bulbs not the stems Plum Tomatoes 2 3 seeded and diced Fresh Flat leaf Parsley 1 tsp finely chopped Extra Virgin Olive Oil 2 3 tbsp Juice of 1 2 a lemon Sea Salt a pinch Pepper a pinch Sesame seeds to garnish Chopped Garlic to garnish Method Pierce the eggplant with a fork and char it over an open flame until it turns black and soft Set aside to cool and drain Once cooled peel the skin In a bowl chop up the eggplant and add the garlic shallots scallions tomatoes and parsley In a separate bowl combine the oil and lemon juice Slowly pour the mixture over the eggplants and work it in using your hands or a fork Season with salt and pepper garnish with Sesame seeds and chopped garlic and top with a sprig of parsley Now all that s left to do is scoop it up with some pita bread or serve it as a side with some meaty mains
