What you’ll need:
• All purpose flour – 1 cup
• Cocoa powder – 1 1/2 tbsp
• Cornflour – 5 3/4 tbsp
• Instant coffee – 2 tsp
• Hot water – 10 ml
• Unsalted butter – 1/3 cup
• Icing sugar – 1/3 cup
• Egg yolk – 1
Method:
1. Combine the hot water and coffee together. Mix well and set aside
2. In another bowl, combine the flour, cocoa powder and cornflour. Mix well and set it aside
3. Next, take a bigger bowl, add the butter and sugar, whisk until smooth. Add the egg yolk and continue whisking. Add the coffee mixture to it and mix
4. Now fold the flour mixture. It should form a smooth dough. If not, you may have to add in a few more tablespoons of flour (only if needed), cover it and refrigerate for 30 minutes
5. Once chilled, take small portions of the dough and form coffee-bean like shapes. Place the cookies on a baking tray lined with parchment paper and freeze for 5 minutes
6. Lastly, #bake the cookies in a preheated oven at 160 degrees C for 10 to 15 minutes
