
Recipe Of The Week: Greek Pasta Salad • Mediterranean goodness for some much-needed #mondaymotivation
Our first #RecipeOfTheWeek for our month-long When In Greece food festival had to be this clean, fresh Greek Pasta Salad. Loaded with tomatoes, artichokes, and feta, all tossed up with a pasta of your choosing, this dish is easy as 1-2-3 to rustle-up and packs in quite the punch of robust Mediterranean flavours.
Ingredients:-
For the dressing:
- Olive Oil, 1/3 cup
- Fresh Lemon Juice, 3 tbsp
- Garlic Clove, 1, minced
- Salt, to taste (note: go low on the salt as the feta and olives are inherently salty)
- Freshly-ground Black Pepper to taste
For the salad:
- Pasta (of your choosing), 1 1/4 cups
- Feta, 1 cup, crumbled
- English Cucumber, 1 medium-sized, diced
- Grape Tomatoes, 12-14, halved
- Kalamata Olives, 1/2 cup, sliced OR Black Olives, 3/4 cup, sliced
- Red Onion, 1/2 cup, chopped and rinsed under water to remove harshness
- Artichoke Hearts, 1 tin, drained and halved
- Fresh Basil, 3 tbsp, chopped
- Fresh Parsley, 2 tbsp, chopped
