While we re always up for a little binge on a Friday the weathers got us feeling extra hot hot hot and craving a light refreshing salad On our plates today is this Gluten Free Green Bean and Feta Salad that ll take you less than 25 minutes to prep and serve and only 2 3 minutes to devour What you need 900g green beans 1 3 cup freshly squeezed lemon juice 1 2 chopped onion 2 cloves garlic finely chopped or minced 1 3 cup extra virgin olive oil 1 tsp dried oregano 1 8 tsp salt and pepper to taste 400g cherry tomatoes halved 1 2 cup chopped fresh basil leaves 1 4 cup chopped fresh Italian parsley leaves 1 2 cup feta cubed How 1 Parboil the green beans by boiling for 3 minutes and then leaving in an ice bath to stop any further cooking 2 While green beans are cooling make the dressing by whisking together the lemon juice garlic onion oil oregano salt and pepper Set aside 3 Place tomatoes basil and parsley in a large serving bowl 4 Dry the green beans with a towel and add them to the bowl tossing together 5 Add the dressing and feta and gently combine Bon appetite

What you need:
900g green beans
1/3 cup freshly squeezed lemon juice
1/2 chopped onion
2 cloves garlic finely chopped or minced
1/3 cup extra virgin olive oil
1 tsp dried oregano
1/8 tsp salt and pepper to taste
400g cherry tomatoes halved
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
1/2 cup feta cubed

How:
1. Parboil the green beans by boiling for 3 minutes and then leaving in an ice bath to stop any further cooking
